Some yummy soup

Before I tell the story let me just add a small obituary. My hand blenders mixing cup was found in the box broken. Probably during my move maybe someone dropped it and didn’t tell me *sniff* so I have to try and get a new cup thingy now L

Moving on……

Last night I was undecided, should I cook pumpkin soup or leek and potato???

I stopped at the veggie van and got both to save me going back but finally decided on the leek and potato.

Ok if you want to try it out you will need leeks, potatoes, some milk, butter and salt and pepper.

Boil the potatoes until mash-able

Slice leeks and place in a fan with some butter and water (so they don’t burn) and cook until soft.

Drain the potatoes, leaving a little bit of the water in the pot, and mash them up adding milk and butter and salt. Add more milk than you would normally use for mash.

It should be all mushy now – add the leeks and you can either mash the mixture or put it in a blender. I have a hand blender and it worked fine.

Serve in a bowl with some warm crusty bread and add pepper if desired to taste J
